I didn’t know why they called this cake what they did, so I did some research.
There are two theories as to why “Jewish apple pie” bears this name.
First, the recipe does not contain any dairy products.
It uses orange juice instead of milk and oil instead of butter.
Thus making it suitable for Jewish holidays.
Specifically Rosh Hashanah, since during this celebration of the Jewish New Year, apples are traditionally eaten.
Also, since Jews who adhere to kosher dietary laws do not consume dairy and meat products together, it makes sense that our desserts are generally dairy-free.
I probably should have posted this recipe before Rosh Hashanah, which had already passed, but it’s the time of year for apple desserts for everyone, so I thought it was still appropriate to post .
My recipe also contains honey which is another traditional food eaten at the Rosh Hashanah table.
Apple picking season is upon us and if you’re like me, you’ve probably picked one too many.
However, you can never have too many apples as they take a while to spoil and they can also be used in a wide range of cuisines.
Put your apples to good use this year and join me in creating the most delicious apple and honey cake. Here is what you will need:
For the cake you will need:
3 large eggs
¾ cup of honey
½ cup white sugar
¼ cup light brown sugar
1 ¼ cups canola oil (substitute applesauce if you want more moisture)
1 ½ teaspoon of vanilla
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 ½ teaspoon cinnamon
¾ teaspoon of salt
¼ teaspoon allspice
4 apples of your choice
For the frosting:
1 ¼ cup powdered sugar
¼ teaspoon vanilla
2 tablespoons of water
This is definitely one of the most ingredient-heavy cake recipes I’ve made, but every ingredient really makes a difference.
When you have all the ingredients, you first want to preheat the oven to 325 degrees Fahrenheit.
Then grate all your apples.
You can also cook them on the stovetop if you prefer a softer consistency or less scattered pieces.
Mix the apples with the rest of the ingredients and place them in a circular baking dish.
I like to use a tube pan for this recipe so the frosting can fall beautifully, but anything goes.
You want to bake the cake for 75-80 minutes, so this will definitely require some patience.
Let the cake cool before pouring your icing on it and feel free to garnish with other candies.
