Make this Strawberry Pancake Recipe for Sunday Brunch

Manufacturing Crepes the weekend is pretty much a staple in my house. Most of us have some experience growing up with a favorite Pancake recipe, and if it’s fresh fruit, so much the better. The best fruit on pancakes? We’re torn between bananas and strawberries (people seem to be quite passionate about the fruit they chose to top the pancakes with). This recipe for Fluffy Strawberry Pancakes is our latest recipe here at B+C, and I personally plan to make it regularly for weekend brunches.


Dry ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon of sugar or coconut sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon pink or sea salt

Wet ingredients:

  • 3 tablespoons melted butter
  • 1 1/4 cups regular or non-dairy milk
  • 1 egg
  • 1 tablespoon of vanilla extract
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 1 cup diced strawberries, plus more for garnish
  • Oil or butter for the pan

Directions:

  1. In a large mixing bowl, add all dry ingredients and whisk until combined.
  2. In a separate mixing bowl, whisk together the melted butter, milk, egg, vanilla extract, lemon juice and lemon zest. Add the wet ingredients to the dry ingredients and whisk slowly until no dry flour lumps remain. Let the dough rest for at least 10 minutes to hydrate the flour.
  3. While the dough is resting, dice the strawberries and prepare the mold. Heat the butter or oil over medium-high heat on the skillet on the stove. Make sure the butter or oil is spread evenly over the pan so the pancakes don’t stick to it.
  4. Place the diced strawberries in a bowl and prepare them near the pan. Using a 1/4 cup measuring cup, scoop out the batter and pour it over the hot skillet. You should be able to fit 2-3 pancakes on the pan, depending on the size of the pan and the thickness of the pancakes. Take a pinch of diced strawberries and place them on each pancake while the bottom cooks. Let each pancake cook for 2-3 minutes, then flip them. Bake another 1-2 minutes, remove the pancakes to a plate, then repeat with the rest of the batter.
  5. Serve these fluffy strawberry pancakes with fresh strawberries, maple syrup and more butter and serve warm.
