Starting your day with a nutritious breakfast is about to get a whole lot more fun with this tasty recipe. Made with old fashioned oats, fresh apples, nuts and a variety of flavorful spices, these oatmeal apple cookies are easy to eat on the go and are as nutritious as they are delicious!
Oatmeal Apple Breakfast Cookies
• 1 ½ cups old-fashioned rolled oats
• ½ cup whole grain flour
• ½ cup ground flax seeds
• 1 tablespoon of cinnamon
• 2 teaspoons baking powder
• 1 teaspoon nutmeg
• ½ teaspoon ground cloves
• ½ teaspoon of salt
• 2 eggs
• ½ cup of milk
• 1/3 cup molasses
• 1 teaspoon vanilla
• 1 medium apple (peeled, cored and cut into small pieces)
• ½ cup chopped walnuts
Preheat the oven to 350°F.
Line baking sheets with parchment paper.
Whisk together all the dry ingredients in a large bowl (ingredients #1 to #8).
In a medium bowl, whisk together the wet ingredients (ingredients #9 to #12).
Slowly stir the liquid into the dry ingredients until completely blended, making sure to scrape down the sides of the bowl with a rubber spatula.
Stir in the diced apples (and walnuts if desired).
Spread the dough evenly on a baking sheet, leaving 2 inches between each cookie. Gently press down on the dough to flatten it slightly.
Bake cookies for 10-12 minutes, cool in pan.
