If you’ve spent any time on TikTok in 2021, you’ve probably come across a few (or, in my case, hundreds and thousands of) videos recreating Emily Mariko’s salmon rice recipe. A meal leftover commonly eaten in Japanese and Korean homes, the content creator’s version of Easy Lunch has gone viral. Mariko’s TikTok sharing salmon recipe garnered over 34 million views in less than two weeks, and unlike Gigi Hadid’s famous baked feta pasta or spicy vodka pasta, this trend is more than simple and can be made flat in 10 minutes using leftovers. After “hearting” so many TikToks from the meal, I finally gave in to the hype and ordered some Kewpie Mayonnaise (a delicious Japanese mayonnaise made from egg yolks) to try it for myself.

The dish really only requires six ingredients, although you can easily customize your own salmon rice however you like. Emily microwaves her leftover salmon and rice with an ice cube – which I have since learned to steam rice – but as I was impatient I quickly made rice and cooked a piece of salmon just before preparing the bowl. The process was even easier than expected and the result was a filling and tasty lunch that I will definitely be adding to my meal rotation. My latest takeaway? Ingredients

  • White rice
  • Salmon filet
  • Soya sauce
  • Sriracha
  • Mayo Kewpie
  • Grilled seaweed
  • Half an avocado (optional)
  • Kimchi (optional)

directions

  1. Gently crumble your salmon and spread it out on a plate.
  2. Add a portion of rice over the salmon.
  3. Add a sprinkle of soy sauce, sriracha and Kewpie mayonnaise on top.
  4. mix all the ingredients together.
  5. Optional, but top your bowl with half a sliced ​​avocado, kimchi, and any other accompaniments you like.
  6. Wrap a baguette full of rice with a piece of grilled seaweed for the perfect bite, and enjoy!
