The Bagari Ranga beef recipe is found in different regions.

Author of the cookbook “Shera Radhunir Twist” (Ananna), Humayra Rayhana Khan compiles traditional meat recipes found across Bangladesh.


  • 1 kg of beef
  • 2 tablespoons ginger paste
  • 1 tbsp garlic paste
  • ¼ cup onion paste
  • 1 teaspoon coriander powder
  • 1 teaspoon ground cumin
  • 1 tablespoon red pepper powder
  • 2 cinnamon sticks
  • 2 pieces of cardamom
  • 2 pieces of clove
  • 2 tablespoons of vinegar
  • ½ cup of milk
  • 2 cups of onion cube
  • 7-8 whole dry red peppers
  • 1 cup oil


Marinate the beef for one hour with all the paste and the spice powder except the vinegar, the milk, the onion cube and the dry chilli. After an hour, cook the meat over medium heat.

The marinated beef required minimal water so if needed add a small amount of hot water.

When the meat curry has reached a thick consistency, pour in the milk and cook for 5 minutes.

After 5 minutes, add vinegar and turn off the gas.

In another skillet, heat the oil and add the onion cube and the dry pepper. When the aroma comes out, pour beef curry into it and put the lid on.

Turn off the gas and keep the curry with the lid on for 30 minutes.

Serve with steamed rice or polao.
