And now his latest venture is self-publishing his first cookbook, Mix.
With over 125 recipes bursting with flavor – from breakfast, lunch and dinner to small plates, snacks, desserts and cocktails – Kat offers insight into her holistic approach to cooking inspired by the seasons. You can find plenty of sugar-free, dairy-free, and gluten-free options, as well as many of his family’s favorite comfort foods.

You wrote that “a multitude of health issues in your twenties” (digestion issues, food sensitivities, brain fog) inspired you to write Mix… what did this health journey look like?
It has been frustrating at times, but also incredibly rewarding and fulfilling. Finally being able to know what food makes me look and feel better has given me so much peace, energy and joy.
What does a typical day of meals (and drinks) look like for you now?
I start each morning with a Yeti mug filled with hot water with lemon, followed by my homemade green juice. I fast intermittently until about noon, then I usually make myself a big, colorful salad with rice crackers (if I’m not eating out or enjoying leftovers from the night before!) I have my smoothie with energizing cocoa in the late afternoon — it’s packed with nutrients and tastes like a chocolate milkshake (the recipe is in my book!) I eat out.
What is your advice for those interested in self-publishing?
For anyone looking to self-publish, I suggest researching printers and asking for paper samples and quotes early on, so you can understand the true cost of printing. I also suggest taking some InDesign courses to learn how to use the program, as you’ll need it to lay out your entire book. Otherwise, hire an amazing graphic designer who can work hand in hand with you! Next, decide whether you want to ship through Amazon or create your own website on a platform like Shopify and handle shipping yourself. The fun part – writing, taking pictures, etc. – is only half of what the full process entails!
What are your favorite recipes in your new book?
Butternut Squash Mac and Cheese is so creamy and flavorful, you’d never know it’s gluten and dairy free! I also love the family recipes that I include like my dad’s chocolate mousse and my grandma’s lemon squares.
What are the 3 essential rules that each hostess must respect?
Always light a delicious scented candle (Diptyque Vanille is my favourite), have a cool playlist playing in the background, and dim the lights to set the mood.

What makes the perfect tablescape?
A beautiful tablescape should be both elegant and casual. This can be achieved with candles, low flower arrangements (so guests can see and talk to each other), and place cards so everyone knows exactly where to sit.
What are you going to cook this fall?
I can’t wait to make Zucchini Chocolate Chip Bread, Apple Cider Donuts, my One Skillet Moroccan Chicken, and my Cedar Planked Salmon, which is super easy and simple, yet full of flavor.

What does a cedar plank do for salmon?
It helps prevent the salmon from drying out and gives it a pleasant, subtle cedar smoke flavor.
How long do you cook salmon on a cedar plank in the oven?
12-15 minutes, or until the salmon reaches an internal temperature of 135 degrees F.
- I like to buy wild salmon.
- Be sure to soak the cedar plank for two hours before using it.
- Marinate the salmon for at least 30 minutes before cooking.
- Be sure to find stone fruits that are in season and really juicy!
- Do not turn your salmon during cooking.
