Host Susana Serrano turns her Hunger Day of Action ingredients into an easy recipe for Lent

In this week’s #citycookingchallenge, City Times reporter Susana Serrano cooked papa con tortitas aTuna dish traditionally prepared during Lent in many Mexican families who practice Catholicism.

Serrano got a variety of items from the Hunger Action Day event on Monday, March 21. Students, staff, and community members can shop for free at Food Bank San Diego and Feeding San Diego every first Tuesday and third Monday of each month at Hunger Days of Action.

Most of the items distributed at the event were fresh produce, dried produce and canned food.

Serrano brought home strawberries, oranges, potatoes, beans, rice, canned tuna and corn. She used potatoes and canned tuna to make tortitas (potato pancakes).

In the video, Serrano explains how this dish takes her back to her childhood and it’s one of her mother’s favorite recipes.
