Gousto Recipe Box is releasing a host of nutrient-dense New Year’s Eve dinner recipes with fitness expert Joe Wicks.

Gousto revealed one of Joe’s favorite recipes from the lineup, a Brazilian-style sweet potato and black bean stew: “Make this Brazilian stew for a hearty January dinner – you won’t even miss the meat. You’ll cook sweet potatoes, red peppers, and black beans in a rich, warming tomato sauce spiced with cumin, paprika, and fresh chilli. Serve over brown rice with a dollop of yogurt and a sweet tomato-orange salsa. Ready in no time, it’s the ultimate comfort food for a winter evening,” says Joe.
Ingredients for 2 (double for 4)
Boil half a kettle
Rinse the brown rice, then add it to a pot with plenty of cold water and bring to a boil over high heat
Once boiling, reduce the heat to medium and cook for 15-20 min or until tender with a light bite
Once cooked, drain it, return it to the pan and keep covered until ready to serve
Peel and cut 1/2 red onion into wedges, then peel and finely chop the remaining red onion
Peel and cut the sweet potato into small pieces
Heat a large, wide-bottomed pan (preferably nonstick with a matching lid) with a drizzle of vegetable oil on medium-high.
Once hot, add the red onion wedges and chopped sweet potato with a pinch of salt and cook 3-4 min or until the onion begins to soften
While softening, deseed the red pepper (scrape the seeds and pit with a teaspoon) and cut into strips
Cut the red chilli in half lengthwise, deseed (scrape the seeds with a teaspoon) and finely chop
Drain and rinse the black beans
Once the onion and sweet potato begin to soften, add the ground cumin and smoked paprika to the pan and cook for 30 seconds or until fragrant.
Add the bell pepper strips, drained black beans and half the chopped chili (can’t stand the heat? Go slow!)
Season with a pinch of salt and stir until coated with spices
Add the tomato frito and the vegetable stock mixture with 200 ml of boiled water
Toss everything together and cook, covered, for 10 to 12 minutes or until the sweet potato has softened and the sauce has thickened – it’s your sweet potato and black bean vegetable stew à la brazilian
While the stew cooks, roughly chop the tomato and finely chop the cilantro, including the stems
Peel and cut the orange in half, then roughly chop half
Add the chopped tomato, the remaining chopped chili (don’t like the spice? Just add a little!), the diced red onion, half the chopped cilantro and the chopped orange in a bowl with juice from remaining orange
Season with a pinch of salt and mix well – it’s your salsa con juego
Serve the brown rice in bowls with the Brazilian-Style Sweet Potato and Black Bean Vegetable Stew on the side
Garnish with salsa con juego and a dollop of plain yogurt
Sprinkle the remaining chopped cilantro on top and enjoy!
