The recipe, lemon meringue pie with extra flaky lard and a buttery pie crust, is a creation of Coast business chef Greg Hozinsky. With over 20 years of culinary experience, Hozinsky has worked in everything from Michelin-starred restaurants to fast casual.
“In making our Pi Day pie, we started with the right ingredients,” Hozinsky said. “Lard has the authenticity and flavor that people love, and that’s reflected in the crust we’ve allowed people to create. Our recipe guides bakers through every step, from lemon curd topping to meringue topping to the finishing touches. The Pi Day Pie recipe is the first in a series of creative recipes designed by Coast for sweet and savory dishes that incorporate beef lard and tallow. Later this spring, Coast will release a series of tutorial videos on YouTube aimed at “best practices” with popular animal fats.
