Everyone loves carrots, right? Especially when the carrot recipe only has three ingredients and takes a few minutes to prepare. This easy roasted carrot recipe can be made with regular carrots or rainbow carrots, which are gorgeous when served.

- 8 to 10 whole carrots, left whole or cut into large chunks, washed
- 3 tablespoons butter, melted
- 3 tablespoons honey

- Put the carrots in a casserole dish. Add melted butter and honey. Turn carrots to coat. Season with salt and pepper.
- Bake in preheated 400 degree F oven for about 25-30 minutes.
